If you love to make home made pie crusts this is a tool you need in your kitchen. I always thought they were made for their weight but learned that they were made to be chilled before they were used.
The secret to flaky pie crusts is cold. Cold butter and a cold roller. Chilled dough is a little harder to roll so the weight does help but when the marble is chilled through it will hold its temp long enough for you to get your dough to its desired thickness.
They are an eye catching tool just sitting in the counter. This one is in great shape and has a good smooth roller. The center dowel is metal with wooden handles.
